Completo Hot Dog

(CL) - Give those everyday hot-dogs a twist with this avocado version, inspired by the original Chilean "Completo".

Recipe:
-2 tablespoons vegetable oil
-1 large white onion cut in thin slices
-8 hot-dog buns, wrapped in aluminum foil and heated in a 350 degree oven for 10-15 minutes
-8 hot-dogs of about the same size as the buns
-Mayonnaise
-Ketchup
-Mustard
-Hot sauce
-2 medium-sized ripe tomatoes, seeded and cubed
-1 small white onion cut in thin slices
-2 large Hass avocados, peeled, seeded, diced and mashed
-Juice of 2 fresh lemons
-Salt

Heat a skillet on medium-high heat, add the oil and the large chopped onion (leave the small onion slices raw for later). Cook for 15 minutes, stirring frequently until the onions soften and begin to caramelize.

Cook the hot-dogs according to one of the following methods: either place them in the gridiron until warm and lightly browned or cook in boiling water on a saucepan, then remove from heat and allow to cool before serving.

Prepare the following spread for each of the eight hot-dog buns: mayonnaise, ketchup, mustard, and hot sauce. Place a hot-dog in each bun and top with fried onions, cut tomatoes, raw onions and avocado. Add the lemon juice and salt. Serve immediately. Serves 8.
